Caramel Pudding

Description

This classic caramel pudding is silky smooth with a dreamy layer of deep golden caramel on top. No oven needed — just steam it and chill. It’s ridiculously easy and always a hit.

Instructions

  1. To make the caramel, add sugar and water to a pan, stir gently, then heat (no stirring). When it turns deep golden amber, take off heat. Quickly pour into 4 ramekins and swirl to coat bottom.

  2. While the caramel cools, warm condensed milk and water in a pan for 1 min to combine, don’t boil.

  3. Let it cool slightly. Strain the beaten eggs to the milk mixture. Then add vanilla.

  4. Pour the mixture over set caramel in ramekins. Cover ramekins with foil.
  5. If you are using the Panasonic NN-DS59 4-in-1 convection microwave oven, fill the water tray. Keep the ramekins on the grill tray and pop in to the lower shelf. Select Steam 2 for 40 minutes. Alternatively, steam on the stove for 40-50 minutes. 
  1. Cool and refrigerate till set. Run a knife around the ramekin and flip onto a plate.
